Tell us a little about yourself?

Well I’m called “The German” and I’ve been a chef for 23 years. I live up north with my girlfriend, my horses and dogs in Dalarna. So my hobbies are of course my horses, training dogs and fishing a lot.

So if you live in Dalarna, why do you work here in Stockholm?

I only work 3 days a week, but for 15 hours each day and then I am off 4 days a week. I have an apartment in Lidingö where I live when I’m  in Stockholm.

What do you do here at the Tower?

I’m a chef, but just a normal chef. Not a kitchen chef or sous-chef. So it’s the first time in 12 or 13 years that I’m a normal cook who just comes in, does his hours and goes home.

And what do you mean by normal cook?

Well, if you’re a kitchen chef you need to write the schedule and need to make the orders for ingredients. I’m just here to see that the food goes out nice and quick and that it tastes good and that’s all I have to care about.

What meal is the most annoying to make here?

Hamburger.

Hamburger, why?

Because the 80’s are over. You don’t have hamburgers on a restaurant menu.

And what would you put in it’s place?

More fish and shellfish.

What’s the best thing about this job?

That you have a nice view when you’re working, it’s really nice. And as I said for me it’s really nice that if someone gets sick or something it’s not me who has the last responsibility. That feels really nice, it’s like vacation. Even if it’s a lot to do, it’s vacation for me.  

And lastly, what do you think of the overall food that we server?

I think the lunches are amazing. They should be at least 50 kronor more. The evening menu should get an update, so that the lunch menu isn’t better than the evening menu.
